On my Facebook feed this morning I saw a post for Detox Granola Bars from GOOP.
As you may know, I am a fan of GOOP recipes. Well, I'm a fan of the few I've tried (cauliflower pizza crust, almond yogurt cake). So, I thought I'd give these bars a try. If nothing else, it got me up and at em after the gut-bomb that was Thanksgiving dinner. I blame it on these au gratin potatoes.
Anyway....I had most of the ingredients in the Detox Granola Bar recipe....or so I thought.
Turns out I was missing flax seeds, didn't have old fashioned oats, have no cloves and have no idea what coconut nectar is.
I went ahead anyway.
My recipe turned out as follows:
Detox Granola Bars - Amy's Take
3 cups McCann's instant oats (maybe 2...see below)
1 cup walnuts
1/3 cup almonds
1/3 cup pumpkin seeds
1/3 cup sunflower seeds
1/3 cup shredded coconut (unsweetened)
1/2 tsp. cinnamon
1/2 tsp. ginger (ground)
1/4 tsp. nutmeg
1/2 tsp. sea salt
1/4 cup olive oil
1/4 cup walnut oil
1/3 cup pure maple syrup
It was a breeze to make them. The trusty Cuisinart made the 'flour' mixture easy-peasy.
On a side note: I think I may have forgotten about the extra 1 cup of oats. I can't remember. My daughter was asking me about some Gap Black Friday sale, and the phone was ringing and I was still in my pajamas. So, I probably only used 2 cups of oats, and these bars are still great.
The flavor is lightly sweet but not cloying. I love the texture. Next time, I'll use all olive oil or, at least, coconut oil. Walnut oil? What was I thinking? And I might add some almond extract. I do love a good slosh of almond extract.
Finally, this would be a badass topping for a fruit crumble for anyone gluten-free.
Verdict: 5 stars. Going in the permanent repertoire.
